Thai Chicken Lettuce Cups Recipe

  • 1 deli rotisserie chicken, pulled
  • ¾ cup Thai Peanut Sauce
  • 1 red bell pepper, cut into thin strips
  • 1 cup matchstick carrots
  • ½ cup dry-roasted peanuts
  • Juice of lime
  • 12 leaves Boston or butter lettuce
  • Chopped cilantro for garnish, optional

  1. In a large skillet, heat Avocado Oil over medium-high heat. Add chicken and ½ cup Thai Peanut Sauce. Cook 2 minutes, stirring frequently.
  2. Stir in red pepper, carrots, peanuts and lime juice. Add remaining ¼ cup Thai Peanut Sauce. Cook 3 minutes, stirring frequently.
  3. Serve in lettuce leaves. Garnish with chopped cilantro, if desired.
Makes 4 servings.

Tip: To save time, purchase chopped rotisserie chicken from your local deli or grocer.
