Thai Chicken & Keto Noodles Recipe

  • 3 (7 ounce) packages spahetti-style plant based noodles* (such as Miracle Noodle™), drained
  • 2 tablespoons Avocado Oil
  • 1½ pounds boneless skinless chicken breasts, thinly sliced
  • 1 red bell pepper, sliced
  • ¾ cup shredded carrots
  • 1 cup reduced sodium chicken broth
  • ⅓ cup unsweetened almond butter or peanut butter, warmed
  • ⅓ cup coconut aminos or gluten-free reduced sodium tamari sauce
  • Juice of 1 lime
  • 1 tablespoon arrowroot powder or cornstarch
  • Chopped fresh cilantro, optional

  1. Heat large skillet over medium heat. Add drained noodles to hot skillet. Cook 4-5 minutes to dry, stirring occasionally. Remove from skillet; set aside.
  2. Add Avocado Oil to skillet; increase heat to medium-high. Add chicken, peppers, carrots, Onion Onion Seasoning and Sí Sí Cilantro Seasoning. Sauté 5-6 minutes. Add noodles back to skillet. Continue sautéing 2-3 minutes.
  3. Meanwhile, in medium bowl, whisk together broth, warmed almond butter, coconut aminos, lime juice and arrowroot powder. Stir into skillet. Simmer, stirring occasionally, until sauce is thickened and glossy, about 5 minutes. Garnish with cilantro, if desired.

Makes 6 servings.

Serve with a low-carb Asian-style green salad.

Make Ahead & Freeze: Combine step 2 ingredients in a gallon freezer bag. Combine step 3 ingredients in a quart freezer bag. Place both bags in a gallon freezer bag. Seal well, label and freeze. Thaw completely. Continue with step 1.

*Note: Prepared zoodles, spaghetti squash or riced cauliflower can be substituted for Miracle Noodles. Omit step 1; add desired substitution in step 2.
