Teriyaki Chicken Stir-Fry Recipe
Enjoy this simple and delicious stir-fry from our Fix It Fast Collection.
- 1½ lbs. boneless skinless chicken breasts, cubed
- ¼ tsp. black pepper
- 2 Tbsp. vegetable oil
- 2½ cups water
- 8 oz. uncooked rotini pasta
- 14 oz. pkg. frozen stir-fry vegetables*
- ¼ tsp. red pepper flakes or to taste
- Chopped peanuts for garnish
In a large saucepan with lid, sauté chicken with black pepper and oil over medium-high heat until no longer pink. Add water and pasta; cover, reduce heat to simmer. Cook 10-12 minutes or until pasta is almost tender, stirring occasionally. Add sauce, vegetables and red pepper flakes to taste. Heat through. Garnish with chopped peanuts if desired. Makes 6 servings. Suggested sides: Sliced oranges and cubed pineapple *May substitute 4 cups chopped fresh vegetables.

I got home from work late and was able to whip this up and still eat at my regular dinner time. My super picky boyfriend finished off his plate, while my friend said this was the first time she'd eaten the broccoli out of something and enjoyed it!
