Sweet & Spicy Chicken Kabobs Recipe
An old favorite, Sweet Pepper Jalapeno Jam, gives these full meal kabobs their flavor.
- 1½ pounds boneless, skinless chicken breasts, cubed
- 1 yellow bell pepper, chopped into 1-inch pieces
- 8 small baby red potatoes, cooked but very firm
- 6 (10-inch) skewers
Alternately thread chicken, yellow pepper and potatoes onto skewers; repeat. Lightly oil grill rack. Grill kabobs over medium heat for 20 minutes or until chicken is cooked through, turning and brushing often with jam. Serve extra jam on the side for dipping if desired. Makes 4-6 servings. Tip: If using wooden skewers, soak in water at least 30 minutes prior to use.
