Sunny Lemon Waffles or Pancakes Recipe
- 2 eggs
- 1¼ cup milk
- Blueberry syrup (optional)
- Whipped cream (optional)
- Fresh berries (optional)
- Sliced almonds (optional)
In a large bowl combine Packets 1 & 2 of the Sunny Lemon Pound Cake & Icing Mix, eggs and milk. Do not overmix; batter will be lumpy. Heat waffle iron and bake according to waffle iron instructions. Serve with blueberry syrup or whipped cream and fresh berries, if desired. Makes 5 (4-inch) waffles.
Tip: For pancakes, prepare batter above and thin with an additional 1-2 tablespoons milk. Ladle onto a greased, preheated griddle. Turn pancakes when puffed and top is bubbly. Makes 8 (5-inch) panckes. Serve warm topped with whipped cream, fresh berries and sliced almonds, if desired.
