Spinach Herb and Vegetable Pasta Salad Recipe

- 1 lb. box rotini pasta, cooked, drained and cooled
- 1 small red onion, cut into 1/2 inch chunks
- 1/2 lb. Cheddar cheese, cut into 1/2 inch chunks
- 1/2 cup shredded carrot
- 2 medium cucumbers, peeled and sliced
- 1/2 cup ranch dressing
- 1/2 cup sour cream
- 1/2 cup mayonnaise
- Salt & pepper to taste
In a large bowl, combine the first 5 ingredients. In a smaller bowl, combine the rest of the ingredients; stir into pasta mixture. Chill 2 hours or overnight. Makes 8 servings.
