Slow-Cooker Loaded Mashed Potatoes Recipe
Making these in the slow-cooker frees up the stove during busy meal-preparation.
ingredients
- 2 pounds red potatoes
- ½ cup sour cream
- ½-1 cup milk

2 tablespoons Bacon Bacon
- 1 cup shredded Cheddar cheese
- Crumbled bacon (optional, for garnish)
- Sliced green onions (optional, for garnish)

directions
Cut potatoes into 1-2 inch chunks. Place in a slow cooker; cover. Cook on high for 2-3 hours (or low for 5-6 hours). Once potatoes are soft, use hand mixer to blend potatoes with sour cream, ½ cup milk, Artichoke & Spinach Warm Dip Mix, Bacon Bacon and cheese. If potatoes seem dry, mix in additional milk, ¼ cup at a time until you reach the desired consistency. Serve with crumbled bacon and green onions (optional).

Delicious twist
This recipe is so tasty! I replaced the potatoes with cooked cauliflower rice with si si cilantro seasoning. I did not use a slow cooker. I mashed with my immersion blender. Very cheesy and flavorful. The joy of cooking is customizing it to suit you!

Did not turn out right
I tried to make this recipe for Thanksgiving and they didn't turn out so good. I wond up having to put them in a pot of water on the stove to cook them. They were sticking to my crock pot and were becoming very dry. I read other slow cooker potato recipes and call for water while cooking them. I fill you need to add water to the ingredients and cooking directions.
