Sí Sí Chicken & Mango Skewers Recipe

Sweet corn, grilled chicken and tropical mango come together for a breezy summer meal.

  • 1 pound boneless skinless chicken breasts, cubed
  • 1 (16 ounce) package frozen mango chunks, thawed
  • Wooden skewers, soaked in water 30 minutes
  • 2 tablespoons Avocado Oil
  • 1 tablespoon lime juice
  • 1 tablespoon 1 teaspoon Si Si Cilantro Seasoning
  • 1 tablespoon butter
  • 1 (10 ounce) package frozen sweet corn

1. Prepare grill to medium heat. Alternately thread chicken and mango onto wooden skewers. 
2. In a small bowl, combine Avocado Oil, lime juice and 1 tablespoon Sí Sí Cilantro Seasoning. Brush onto skewers. Grill, turning occasionally, about 10-12 minutes or until internal temperature of chicken reaches 165°F on an instant read food thermometer.
3. Meanwhile, in a large skillet, heat butter over medium-high heat. Add remaining 1 teaspoon Sí Sí Cilantro Seasoning and sweet corn. Sauté corn until crisp-tender, about 5-7 minutes. Serve skewers over sautéed corn. 

Makes 4-6 servings.

Note: May substitute fresh mango if desired.
