Sea Salt & Herb Veggie Kabobs Recipe
- 1 green bell pepper, cut into chunks
- 1 medium red onion, cut into chunks
- 1 cup mushrooms
- 1 cup cherry tomatoes
- 1 zucchini, sliced
- 1 yellow zucchini, sliced
Preheat oven to 400°. Thread first 6 ingredients onto skewers. Place skewers on a greased baking sheet. Combine Avocado Oil and Sea Salt & Herb Seasoning in a small bowl. Brush over veggie kabobs. Let sit 10 minutes.
Place in oven and bake 15-20 minutes until vegetables reach desired tenderness.
Tip: If you are using wooden skewers, be sure to soak them in cold water for about 20 minutes before using to prevent burning.
