Rustic Herb Pork Tenderloin Recipe

  1. Combine all ingredients in a gallon freezer bag; seal well. Refrigerate 2 hours or up to overnight.
  2. Preheat oven to 350°F. Heat a large oven-proof skillet over medium-high heat. Remove pork from marinade; discard bag with marinade. Place pork in skillet. Sear until browned on all sides, about 5-6 minutes.
  3. Transfer to oven. Bake until internal temperature reaches 155°F on an instant-read food thermometer, about 15-20 minutes.
  4. Remove from skillet. Let stand 5 minutes. Slice into 1-inch medallions.

Makes 6 servings.

Serve with veggies of choice.

I let it marinate for about 4 hours then fired up the grill and smoked it on a cedar plank for about 40 minutes over a medium fire. It was so tender you could have cut it with a plastic fork! My family loved it.... Quote of the day? "Mom please make this again... and often!
