Rustic Chicken & Carrot Noodle Soup Recipe
- 4 boneless, skinless chicken breasts, cut into 1/2-inch cubes
- 8 cups low-sodium chicken broth
- 5-6 ribs celery, chopped
- 1 medium onion, chopped
- 2-2½ pounds carrots, spiralized
Heat Avocado Oil over medium-high heat in a skillet; add chicken and saute until internal temperature reaches 165°.
Meanwhile, heat chicken broth, Rustic Herb Seasoning, celery and onions over medium heat; adding chicken when done. Heat to boiling; stirring occasionally. Reduce heat and simmer approximately 20-25 minutes until onions and celery reach desired tenderness. Add carrot "noodles" and continue cooking approximately 5-10 minutes just until carrots start to soften avoid overcooking.
Serve with your favorite crackers.
