Roasted Rustic Herb Fennel and Orange Chicken Recipe
A little citrus and a little pepper - perfect for chicken tonight.

- 3 tablespoons orange juice
- 3 tablespoons lemon juice
- 3 tablespoons brown sugar
- 1 1/2 pounds chicken, cubed
- 2 bulbs fennel, cut into cubes
- 2 oranges, sliced
- 4 large red potatoes
Mix first 5 ingredients together to make marinade. Put chicken, fennel and orange slices into 11 x 15 pan and pour marinade over. Let sit for 30 minutes in refrigerator. Bake covered at 350 for 30 minutes. Uncover and stir and roast in oven at 450 for 25 to 30 minutes. Chicken should be no longer pink and potatoes, chicken and oranges should be browned
