Roasted Garlic Smashed Potatoes Recipe
- 2½ lbs. small red potatoes with skins, cubed
- 1/3 cup milk
- 8 oz. cream cheese, cubed
Add potatoes to a large saucepan and cover with water. Boil potatoes for 10-15 minutes or until tender; drain. Break potatoes into smaller chunks with a fork; add remaining ingredients; stir well to combine. Cover and let sit 5 minutes to blend flavors. Salt and pepper to taste. Makes 5-6 servings.
