Roasted Carrots Recipe
- 2 lbs. whole carrots, peeled
- 3 Tbsp. melted butter
- 2 Tbsp. olive oil
- 1 Tbsp. honey
- ⅛ tsp. cayenne pepper, optional
Preheat oven to 400°. Cut carrots in half lengthwise. Place on a large greased baking sheet.
Combine remaining ingredients. Pour over carrots and toss to coat. Salt and pepper to taste. Bake 20-25 minutes, turning carrots over halfway through the cooking time. Makes 10-12 servings.
