Raspberry Chocolate Mini Cheesecakes Recipe
These mini cheesecakes are very easy to prepare and make an elegant dessert.
- 8 oz. cream cheese, softened
- 1 egg
- 6 chocolate sandwich cookies
- 18 raspberries
- 4 oz. whipped topping
Preheat oven to 350°. Beat first 2 ingredients on medium speed until well blended. Add egg beating on low speed just until blended. Place 6 paper cupcake liners into muffin pan, and place one sandwich cookie in bottom of each. Fill evenly with batter. Bake 20 minutes or until centers are almost set. Cool. Refrigerate 3 hours or overnight. Just before serving top each with a dollop of whipped topping, some of the crumb topper and 3 raspberries. Note: Lighten it up by using light products in the following 3 items - cream cheese, whipped topping and chocolate sandwich cookies.
