Pumpkin Scones Recipe
- 1 cup + 2 Tbsp. oatmeal, divided
- 1 cup dried cranberries
- ½ cup Greek yogurt
- 15 oz. can pumpkin
- ¼ cup honey
- ½ cup pumpkin seeds, chopped almonds or walnuts (optional)
- ½ cup dark chocolate chips
Preheat oven to 325°. Place ingredients, except 2 Tbsp. oatmeal and chocolate chips, in a large bowl in the order listed. Stir to combine. Grease baking sheet and spread mixture in a 10-inch circle. Sprinkle top with 2 Tbsp. oatmeal. Use pizza cutter to slice in triangles like a pizza. Bake for 45 minutes. Remove from oven, run pizza cutter over slices again.
Heat ½ cup dark chocolate chips in a small saucepan over low heat, just until melted. Drizzle over scones. Let chocolate set and store for quick breakfast treats when you're on the go.
