  • 1 cup water
  • ¾ cup butter, melted
  • ¼ teaspoon peppermint extract
  • 1 (16 ounce) container whipped vanilla frosting
  • 12 large chocolate mint patties (such as York® Peppermint Patties)
  • 36 small chocolate-covered mints (such as Junior Mints®)
  • 1 cup sweetened flaked coconut

  1. Preheat oven to 350°F. Prepare Classy Chocolate Pound Cake Mix according to package directions with water and butter. Stir in peppermint extract. Divide batter evenly among 1 (12-count) muffin pan, lined with paper liners.
  2. Bake 25 minutes. Remove from oven; cool completely.
  3. Generously frost cupcakes. Top each one with a large chocolate mint patty in the center for the "paw"; press three small chocolate-covered mints along the top of each cupcakes for the "toes." Gently pat coconut onto frosting for a "fur" effect.
Makes 12 servings. Store in an air-tight container.
