Oven-Roasted Winter Vegetables Recipe
Your favorite winter vegetables come together in this delicious, flavorful medley.
- ½ cup olive oil
- 1 lb. carrots, peeled and cut into 1-inch pieces
- 1 lb. parsnips, peeled and cut into 1-inch pieces
- 1 medium butternut squash, peeled and cut into 1-inch pieces
Preheat oven to 425°. Combine olive oil, Italian Garlic Seasoning and Onion Onion™ Seasoning in a large bowl. Add the vegetables and toss to coat. Arrange vegetables in a single layer on a large baking sheet. Bake for 30-35 minutes.

I made this recipe for the first time a few years ago & not only did I discover the yummy deliciousness of the parsnip, but a great go-to side dish recipe that's super-easy & always gets rave reviews! One major tweak I've started doing is substituting Rustic Herb Seasoning for the Italian Garlic Seasoning (Rustic Herb is one of my favorite spices) - to me it makes for a better flavor profile to meld with poultry main dishes.
