Nana's Carrot Carrot Cupcakes Recipe
Whether you’re celebrating Easter or just want a cute spring-time treat, this carrot cupcake recipe is delightful!
- 2 cups grated carrots
- 8 oz. can unsweetened crushed pineapple, well drained
- 2 eggs
- 16 oz. canned cream cheese frosting
- Orange gel icing
- Green gel icing
Preheat oven to 375°. Combine first 4 ingredients; stir until blended. Divide batter evenly among 12 paper liners or greased muffin cups. Bake for 25 minutes; cool completely. Frost with cream cheese frosting. Use the orange icing to create the carrot by using a zig-zag motion to form the shape of a triangle. Use the green icing to create the carrot greens. Makes about 12 cupcakes.
