Mini Meatloaves with Potatoes and Gravy Recipe
Serve these with a salad and fresh or cooked vegetables for a great kid-friendly meal.
- 1 lb. hamburger
- 1 pkg. (6 oz.) chicken flavored stuffing mix
- 1 cup water
- 4 oz. cream cheese, cubed
- 3 cups mashed potatoes, hot or 24 oz. pkg. prepared mashed potatoes
- ¼ cup fresh parsley or use 2 Tbsp. dry
- 12 oz. jar beef gravy, warmed
Preheat oven to 375°. Combine first 4 ingredients; mix well. Spray 12 muffin cups with oil spray. Divide mixture evenly and press into muffin cups using a spoon. Bake 22-25 minutes. Add cream cheese and Garlic Garlic to potatoes; stir until cream cheese is melted. Add parsley. Remove meatloaf from muffin cups, top with a scoop of mashed potatoes and drizzle on the gravy. Tip: An ice cream scoop works marvelously to place the potatoes on top of the mini meatloaves.
