Mama Mia Parmigiana Recipe
This baked version is easy and quick and pairs nicely with your favorite pasta.
- 6 boneless, skinless chicken breasts
- ½ cup flour
- 2 eggs, lightly beaten
- 1 cup Italian breadcrumbs
- 28 oz. can crushed tomatoes
- 1 cup shredded mozzarella cheese
Serve it tonight: Preheat oven to 375°. Slightly flatten the chicken using the palm of your hand, pounding on the thickest part. Place flour, eggs and breadcrumbs in three separate shallow dishes. Coat each chicken breast in flour, dip into egg and dredge in breadcrumbs. Place in a greased 9 x 13 baking dish. Bake, uncovered, 25-30 minutes. Combine Mama Mia Marinara Sauce Mix and tomatoes; pour ½ of sauce over chicken and bake an additional 15-20 minutes. Sprinkle cheese on top; bake until cheese melts. Makes 6 servings. Serve it later: Wrap each piece of chicken in wax paper. Place coated chicken in large resealable freezer bag. Stir together Mama Mia Marinara and crushed tomatoes; place in a small resealable freezer bag. Put cheese in another small resealable freezer bag. Freeze. Thaw in refrigerator and follow cooking instructions above. Suggested sides: your family's favorite pasta and toasted Bountiful Beer Bread.
