Mama Mia Cacciatore Recipe
Chicken and vegetables are sure to be a hit when combined for this family-friendly dinner.
- 1 Tbsp. butter
- 1½ lbs. boneless, skinless chicken breasts, cubed
- 8 oz. fresh mushrooms, sliced
- 1 green bell pepper, cut into thin strips
- 28 oz. can stewed tomatoes, drained
- 12 oz. package egg noodles
- ½ cup sour cream
- Salt & pepper to taste
Start water for boiling pasta. Melt butter in a large skillet over medium heat; add chicken. Brown chicken evenly on all sides; add next 3 ingredients. Sauté 2-3 minutes or until vegetables are tender. Stir in tomatoes; simmer for 5-10 minutes. While sauce simmers, prepare egg noodles as directed on package. Stir sour cream into sauce; heat through. Season to taste with salt and pepper. Divide noodles among serving bowls; spoon sauce over top. Makes 6 servings. Suggested sides: Caesar salad and fresh steamed vegetables.
