Lush Lemon Cookies Recipe
These are delicious light cookies with a fresh lemon flavor.
- 1 egg
- 6 Tbsp. (¾ stick) melted butter
- ½ cup sweetened flaked coconut
Preheat oven to 325°. Combine Packet 1 and Packet 2 and remaining ingredients; stir until well blended. Drop heaping teaspoons of dough on greased baking sheet. Bake 12-14 minutes or until lightly browned. Makes about 24 cookies. Optional: Frost with your favorite frosting and top with coconut or your favorite nut.
Rated 5 out of 5 by amyno from Yum! I love all things lemon, so I stocked up on the Lush Lemon cake mix last summer just before it was retired. This cookie recipe is definitely the best way to use this mix. I made the first batch according to the directions, and they did spread out like crazy. The next time, I added 1/4 cup of flour. They were still chewy, but they didn't spread so much. I also added 1/2 cup of white chocolate chips. Yum! Please bring this mix back this spring / summer!

Rated 5 out of 5 by TSMDW from amazing cookies! Amazing lemon flavor, these practically melt in my mouth.. the cookies spread out flat, so make the cookie balls smaller than usual. Make them the regular way, recipe yields 24, so if you have smaller cookie dough balls, you'll have a ton more. LOVE these!!!

Rated 5 out of 5 by wannabechef from Delish! When I took the first batch of cookies out of the oven, my jaw dropped because there were huge! The cookies spread to about 3 inches wide! Due to the size I ended up with about 12 cookies. I bake a lot, so I used a cookie baller, and parchment paper instead of a greased baking sheet. Delish!
