Low Carb Chicken Enchilada Bake Recipe

  • 2 lbs bonless skinless chicken breasts
  • To taste Salt
  • 1 - 10oz can enchilada sauce
  • 1 cup shredded cheddar cheese
  • 3 green onions chopped
  • 1-2 bags Frozen Cauliflower

Sprinkle the chicken on both sides with Wahoo! Chili seasoning, grill or saute. Cut the chicken into cubes and place in a greased casserole dish and add in cauliflower. Season with salt to taste. Add the enchilada sauce and toss to coat. Sprinkle the cheese over the chicken and bake at 350 degrees for about 30 minutes, until hot and bubbly. Scatter the green onions over the top.
