Lemon Unicorn Blondie Recipe

  1. Preheat oven to 325°F. In large bowl, combine Sunny Lemon Pound Cake Mix packet 1 and ¾ cup melted butter; blend well. Batter will be lumpy.
  2. Press into a greased 8x8-inch baking pan. Bake 30-35 minutes, until toothpick inserted in middle comes out clean. Cool.
  3. In small bowl, combine Sunny Lemon Pound Cake Mix packet 2 with water and remaining butter; whisk until smooth. Divide into three smaller bowls and dye icing pink, blue and purple.
  4. Drop icing on bars with a teaspoon. Swirl colors together with a spatula. Decorate with sprinkles.

Makes 16 bars.

Rated 3 out of 5 by from A bit dry The taste is good but I think they should have only been in the oven about 15 minutes. I took them out at 20 and they were a bit overcooked already. Next time I would add a bit more water to the glaze too. I wanted these to turn out so badly & I think with some adjustments the recipe would turn out much better!

Rated 4 out of 5 by from Delicious and fun to eat! It was definitely easy to make. The icing was a little more difficult, but I should have mixed it longer. Otherwise, it was so good and very dense. Not only was it delicious, it was fun and colorful! Good for children!
