Lemon Blueberry Bread Recipe
Great for breakfast, but good anytime and easy to do. So many things you can do with Bountiful Beer Bread Mix.

- 1 Fresh Lemon
- 1 bottle Sparkling Lemonade or Squirt
- 1/4 tsp. Nutmeg
- 1/2 tsp. Cinnamon
- 1/2 cup Glaze (your choice optional)
- 1/2 pint Fresh Blueberries
Photo shows a double recipe batch baked in a springform pan. For a single loaf, you basically follow the instructions for the bread mix except: Grate the zest and juice the lemon into your measuring cup, then add the nutmeg, cinnamon, and carbonated lemonade or Squirt to reach 12 ounces. In a bowl, add fresh blueberries to bread mix and lightly toss to mix. Slowly stir in your cup of liquid and stir gently with wooden spoon or spatula until all ingredients are combined only. Try to not break up the berries. Spread into a standard size loaf pan and bake according to bread directions. When done, you can either use your favorite glaze to drizzle over top, or dust with powdered sugar, or just brush the top with melted butter. Quick glaze: heat a can of frosting in your microwave just till melted then drizzle over your baked goods. Also, you can opt for different fruit, nuts, and fruit flavored sodas.

I purchased lemon frosting. I melted it and poured it over the still warm bread while still in the pan. I will certainly be making this again.
