Italian Raspberry Sgroppino Recipe
- 1½ cups hot water
- 1 cup half & half
- 2 (750ml) bottles dry Prosecco or sparkling wine, chilled
- Mint leaves
- No bake/cook
- In a 1-quart or larger freezeable storage container, combine hot water and Rockin' Raspberry Frozen Drink Mix. Stir until dissolved.
- Stir in half & half. Cover and freeze 12-14 hours.
- Place ¾ cup Prosecco in 8-10 tall cocktail glasses or wine glasses. Top off with a scoop of sherbet. Garnish with mint.
Makes 10 servings.
Make Ahead: Prepare through step 2 up to 1 week ahead.
Tip: Run ice cream scooper under hot water to help make scooping frozen sherbet easier. Or allow sherbet to thaw at room temperature for 5-10 minutes or until scoopable.
