Herb and Lemon Roasted Chicken Recipe
This delicious dish is bursting with the flavors of rustic herbs, garlic pepper and lemon!
- 3½ - 4 pounds whole chicken
- 1 lemon, cut in half
- 2 tablespoon oil
- Salt and pepper to taste, optional
- Slow Cooker
Rub first 2 ingredients onto chicken and place cut lemon inside chicken. Place chicken in a gallon resealable freezer bag; freeze. Thaw completely; grease slow cooker with oil, cook chicken on low for 5-6 hours until tender or bake, covered, in a 350° oven for 2 - 2½ hours until tender. Makes about 6 servings. Tip: If baking in oven, uncover the last 30 minutes of baking time to brown.

And, it's the easiest whole chicken recipe! Rustic herb is magic on poultry! The lemon isn't overpowering, either...subtle. *I like to drizzle a little roasted garlic infused oil before adding those wonderful TS spices! Kudos to the person that came up w/this recipe!

Rated 5 out of 5 by Becky C from Absolutely Delicious Chicken!! I was skeptical as I've never done a full chicken in the crockpot, but this was DELICIOUS! I had a 5.5 lb chicken, and I used about 2 Tbsp total of spices (a bit more Rustic Herb than the Garlic Pepper), and used two lemons. Only thing I'd do next time is add some fresh rosemary for a bit of that flavor. Cooked 6 hours on low and it fell off the bone. Will definitely make again!!
