Grilled Tarragon Potatoes Recipe

  • 5-6 medium red potatoes, scrubbed clean
  • ½ cup butter, melted
  • 1 packet Shallot Tarragon Compound Butter Mix

  1. Prepare grill to medium heat. Place potatoes in a microwave-safe shallow dish; pierce potatoes several times with a fork. Microwave on HIGH 5-7 minutes or until fork can easily pierce potato, but slightly underdone. Let cool slightly.
  2. Meanwhile, in small bowl, combine melted butter and Shallot Tarragon Compound Butter Mix; salt and pepper as desired.
  3. Slice potatoes ¼-inch thick. Brush with butter mixture. Place potatoes on grill. Grill, turning occasionally and brushing with butter, until golden brown and cooked through, about 6-8 minutes.
