Greek-Marinated Chicken Kebabs Recipe
ingredients
- 2 lbs. boneless skinless chicken breasts

1 packet Greek Herb Beer Marinade Mix™
- ½ cup beer
- 1 red onion, sliced into 1-inch pieces
- 2 red bell peppers, sliced into 1-inch pieces
- 8 medium purple* potatoes, cut into 1-inch cubes
- 12 wooden skewers (soak for 30 minutes before using)

Preheat grill to medium-high heat. Combine Greek Herb Beer Marinade Mix and beer in a large resealable plastic bag. Seal and shake vigorously. Add chicken, turning to coat. Refrigerate 30 minutes or more.
Remove chicken from bag and discard leftover marinade. Cut chicken into 1-inch pieces.
On a skewer thread red pepper, red onion, chicken and potato to create a red, white and blue effect. Continue to fill all skewers. Grill until internal temperature reaches at least 165°. Makes 12 servings.
*If you're unable to find purple potatoes, you can substitute Yukon Gold.

Easy and Delicious
My entire favorite family loved this recipe. I purchased precut veggies and didn't use skewers just to speed up the prep process. Cooking the veggies and chicken in the marinade made for a tasty meal. I served with brown rice. YUM!
