Gluten-Free Peanut Butter Crunch Brownies Recipe

  • Gluten-Free Fudgy Brownie Mix
  • ¾ cup (1½ sticks) melted butter
  • 2 eggs
  • ¼ cup salted peanuts
  • 4 regular-sized peanut butter cups, chopped
  • ¾ cups milk chocolate chips
  • ¾ cups creamy peanut butter
  • ¼ Tbsp. unsalted butter
  • ¾ cups Gluten Free Rice Krispies® cereal

Prepare the brownies with butter and eggs according to the package directions and bake for about 35 minutes (5 minutes less than the package states). Remove from the oven and sprinkle the top with the peanuts and chopped peanut butter cups. Return to the oven and bake for 5 additional minutes. While they are finishing baking, melt the chocolate chips, peanut butter and butter in the microwave at half power for 30 seconds; stir. Repeat until melted. Stir in the cereal to evenly coat. Remove the brownies from the oven and pour the chocolate and peanut butter mixture over top. Spread to cover evenly. Refrigerate for 2 hours before cutting and serving. Store in an airtight container in the refrigerator. More Ways to Mix It Up! Substitute plain Greek yogurt for the melted butter – great way to cut out some fat…and they still taste great – you won’t miss the butter! If you don’t have plain Greek yogurt, any yogurt (flavored or plain) will work, or use applesauce.
