Giddyup Black Bean Salsa Recipe
This salsa is ready in just a few minutes, is simple to make and has just enough zip.
- 15 oz. can black beans, rinsed and drained
- 7 oz. can whole kernel corn, drained
- 1 roma tomato, chopped
- 1 tsp. lime juice
- 1 avocado, chopped
- No bake/cook
Combine first 5 ingredients; cover and chill 30 minutes or up to 3 hours. Stir in avocado just before serving. Serve with Blue Aztec Chips. Makes 4 cups salsa.

I took this to a potluck and everyone wanted the recipe! Serve it with tortilla chips OR put in on your tacos or nachos! Definitely a keeper!
