Fiesta Cheese Crisps Recipe

- 1 cup flour
- 1/2 cup (1 stick) softened butter
- 1 cup finely shredded Cheddar cheese
Combine all ingredients in medium bowl; work with hands until dough forms (about 5 minutes). Divide dough between two sheets of plastic wrap. Form into 1 1/2-inch logs; roll up tightly. Chill 2 hours (or freeze 1 hour). Remove plastic wrap; slice dough into 1/4-inch thick rounds. Arrange 1 inch apart on baking sheet. Bake at 400º for 10-12 minutes or until edges are golden. Cool on racks. Makes 8-10 servings.
