Eat the Rainbow Veggie Kabobs Recipe
ingredients
- 6 cups assorted vegetables in the color of the rainbow (such as cherry tomatoes, orange bell peppers, yellow summer squash, broccoli, zucchini, red onion, eggplant), cut into similar sizes

1-2 tablespoons Avocado Oil
- 1 tablespoon TS Seasoning of Choice:
- OR
- 1-2 teaspoons TS Seasoning of Choice:
- 6-12 metal skewers or wooden skewers soaked in water 30 minutes

- Prepare grill to medium heat. In large bowl, combine vegetables, oil of choice and seasoning of choice (you can also mix and match your seasonings).
- Thread veggies on skewers in a "ROY G. BIV" (Red, Orange, Yellow, Green, Blue, Indigo, Violet) rainbow pattern or put all one type of veggie on each skewer.
- Place skewers on grill. Grill, turning occasionally until veggies are desired doneness, about 10-12 minutes.
