Creamy Wild Rice Egg Bake Recipe

  • Creamy Wild Rice Soup Mix
  • 3½ cups water
  • 18 eggs
  • 1 cup half and half
  • 3 Tbsp. butter
  • ½ cup shredded sharp Cheddar cheese
  • 8 slices fried, crumbled bacon

Prepare Creamy Wild Rice Soup Mix as directed with water; set aside. Beat eggs with half and half. Heat butter in heavy skillet; pour in egg mixture. Reduce heat as mixture begins to set, lift cooked portions with spatula to allow uncooked portions to flow to the bottom. Cook until well scrambled but still moist. Spoon into buttered, large shallow casserole. Combine soup with cheese and spoon over eggs. Sprinkle bacon on top. Refrigerate, covered, overnight. Bake at 325°, uncovered, about 60 minutes. 8-10 servings.

Everyone was raving about it, and disappointed that I only made one 9x13 pan for them. This is definitely in my recipe box to make again and again - you can't go wrong with this incredible soup mix!

The rice makes almost a gravy like texture that goes great with the eggs. We had this for dinner last night with leftovers for breakfast. I will definitely make it again!

Best part is you do all the prep work the day before and put it in the fridge overnight. Bake 1 hour prior and let set for about 15 min the flavor is AMAZING! The egg bake even at room temp is good!

Don't be deceived by the first glance, it might look like tomatoes on top, but it is not. Rich and creamy scrambled eggs, topped with reduced Creamy Wild Rice Soup, with bacon and cheese on top. If you like the Soup and you like egg bakes, you'll love this!
