Corn, Black Bean Chicken Enchiladas

Everyone including the kids loved it. I didn't have the Wahoo Chili so I changed it to the Mama's Taco Seasoning and added white queso and then red sauce. It was amazing.

I never made Enchiladas before and now I don't know why I waited so long. This was such a simple recipe and came together fast. I used Magic Chicken which helped make it easy and gave great flavor. My adult kids loved this meal. It will become a regular in my kitchen now!

I could not get enough of this. I had it last week and I am already making it again.

Easy to make and was a big hit for my boyfriend and I! We changed the enchallida sauce to homemade cheese sauce and it was amazing! I will definetly make this again!

I made this for dinner to rave reviews I cut the fat using low fat cheese and lowered carbs by using low carb tortillas yum !
