Chicken Cordon Bleu Casserole Recipe

  • Creamy Wild Rice Soup Mix
  • 3 1/2 cups water
  • 1 1/2 cups shredded Swiss cheese, divided
  • 2 cups cooked, cubed chicken breast
  • 1 cup cubed ham
  • Perfect Parmesan Biscuit Mix
  • 1/2 cup cold water

Combine first 3 ingredients; simmer, covered, 30 minutes. Combine 1 cup Swiss cheese, chicken and ham in a greased 2 1/2 quart casserole dish; stir in prepared soup. Combine Perfect Parmesan Biscuit Mix, 1/2 cup water and remaining cheese; stir to blend. Dollop spoonfuls of biscuit dough over hot soup mixture. Bake, uncovered, at 350° for 40-45 minutes or until bubbly and the biscuits are browned. Makes 8-10 servings.

Rated 4 out of 5 by from Chicken Cordon Bleu This dish was very easy to prepare and flavorful, although the wild rice soup mix is very salty. Tastefully Simple should modify the mix to decrease the salt. I would make this dish again, possibly using potatoes and a creamy thickener to soak up some of the salt!

Rated 4 out of 5 by from Really good This was a good recipe, although I'd make one change and changed a few things. 1. I'd brown the ham and cook it with the soup for maximum flavor. 2. I added Bleu Cheese crumbles to the biscuits, instead of the Swiss, though I did put the remainder of Swiss over the biscuits. 2. My biscuits required twice the water. 3. I used an entire rotisserie chicken, shredded and 2 ham steaks. So more like 2-3 cups each. It was a hit all around!

I was looking for something to do with leftover Easter ham and a rotisserie chicken in my fridge, and this was PERFECT as I happened to have ALL the ingredients on hand! My husband LOVED it! I did find it a little salty, so I will try adding milk or sour cream next time per another reviewer's suggestion.
