Chicken & Pepper Jack Baked Rotelle Recipe

Our grown-up version of macaroni and cheese is baked up with rotelle noodles, chicken and Va Va Veggie! Cheese Ball Mix.

ingredients

  • 16 oz. box rotelle pasta, prepared
  • 5 Tbsp. butter
  • 6 Tbsp. flour
  • 3 cups milk, warmed
  • ⅛ tsp. salt
  • 2 cups shredded pepper jack cheese
  • 1 cup shredded Cheddar cheese, divided
  • 3 cups chicken breast, cooked, cut into strips
  • 1 pkt. Va Va Veggie!™ Cheese Ball Mix

Preheat oven to 350°. Melt butter in medium saucepan over medium heat; add the flour and whisk to combine. Cook for 1 minute; stir continuously. Add 2 cups of warmed milk, salt and cheese ball mix; whisk to combine. Bring the mixture to a boil; reduce heat to low. Slowly add the pepper jack cheese and ¾ cup of the Cheddar cheese; stir well. Pour the cheese sauce over the cooked pasta. Add the chicken; stir to combine. Add additional milk if the sauce is too thick. Pour into greased 9 x 13 baking dish; sprinkle with the remaining ¼ cup Cheddar cheese. Bake 25-30 minutes, until the edges are bubbling and the top is starting to brown. Let rest 10 minutes before serving. Serves 8 servings.

Rated 5 out of 5 by from Holy Cow Delicious! Used Colby Jack and Cheddar in mine because my family does not like heat, and really, really enjoyed the flavor the Va Va Veggie mix gave it! Added some cornflake crumbs to the top to add a bit of crunch. This will be a repeat!

I used shredded parmesan and Swiss chees, not having any pepper jack on hand. A definite add to my recipe box. Note: the recipe never tells you when to add the Va va veggie mix. I added it at the same time the chicken went in.
