  • 2 tablespoons butter, divided

  • 2 large eggs
  • Sliced green onions, Sriracha sauce, optional

This is a leftover recipe for Bayou Pork Fried Rice.

  1. In large skillet, heat 1 tablespoon butter over medium-high heat. Add Bayou Pork Fried Rice; using a spatula, flatten into a thin layer. Allow to cook until crispy on bottom, about 3-4 minutes. Turn over and continue cooking until crispy on other side, about 2-3 minutes.
  2. Meanwhile, in medium skillet, melt remaining 1 tablespoon butter over medium heat. When sizzling, add eggs; salt and pepper as desired. Cook to desired doneness, turning over when halfway done.
  3. Serve eggs over fried rice. Garnish with green onions and drizzle with Sriracha, if desired.
