Berry Streusel Muffins Recipe
A great brunch item or on-the-go snack.

Raspberry Chia Seed Muffin Mix
- 2/3 cup water
- 1 egg
- 1/3 cup fresh or frozen blueberries
- ¼ cup + 2 Tbsp. sliced almonds, divided
- 3 Tbsp. quick oats
- 1 Tbsp. honey

directions
Preheat oven to 350°. Combine first 3 ingredients in a large bowl; gently stir in blueberries and ¼ cup almonds. Evenly divide batter into 8 paper liners or greased muffin cups. Combine oats, honey and remaining 2 Tbsp. almonds. Distribute evenly on the tops of muffins, slightly pressing into the batter. Bake 20-25 minutes. Cool and remove from pan. Makes 8 muffins.
