Bayou Pork Stew Recipe
This hearty pork stew recipe is filled with meat and vegetables.
- 2 lbs. boneless pork loin, cubed
- 1 Tbsp. vegetable oil
- 1 1/2 - 2 lbs. red potatoes, unpeeled and quartered
- 8 oz. peeled carrots, cut into 1-inch chunks
- 2 cups cola*
- Ground black pepper to taste
- 2 Tbsp. cornstarch
- Slow Cooker
Sauté pork in vegetable oil until lightly browned on all sides (if you prefer, it’s not necessary to brown the pork); place pork in greased slow cooker. Add next 5 ingredients and 1/2 cup Bayou Bourbon Glaze. Cover, cook on low for 6-8 hours. Combine remaining Bayou Bourbon Glaze and cornstarch; stir to blend. Pour mixture into stew; stir gently until sauce thickens and stew is hot. Makes 6-8 servings. *Cola will not add a lot of sweet flavor and helps to tenderize the meat.
Rated 4 out of 5 by simplyapatla from Surprisingly good I purchased stew meat and searched for a recipe, unsure but settled on this one. I used beef instead of pork. It was so delicious. I did add salt because it needed it. But the sweet flavor was just perfect.

Rated 1 out of 5 by Nicole_302 from Too sweet and rich!!! :( Unfortunately I did not like this. It was way too rich and sweet. Would be good to just cook meat in sauce and add veggies seperate. Tasted like sweet potatoes
