Balsamic Shrimp Stuffed Mushrooms Recipe
- ½ cup minced onion
- 2 tsp. olive oil
- 6 oz. cooked baby shrimp
- ⅔ cup breadcrumbs
- ½ cup grated Parmesan cheese
- ¼ cup mayonnaise
- Salt and pepper to taste
- 2 (8 oz.) pkgs. stemmed, cleaned fresh mushrooms
Sauté onions in olive oil over medium heat until soft. Transfer to medium bowl; add next 6 ingredients. Season with salt and pepper. Arrange mushrooms, rounded side down, on greased baking pan. Mound shrimp filling in mushrooms, press to compact slightly. Bake mushrooms at 350° until tender and filling begins to brown, about 15-20 minutes. Serve hot. Makes 18-20 mushrooms.
