Avocado & Corn Salad Recipe

  • 1 (14.5 ounce) can fire roasted diced tomatoes, drained
  • 1 (15 ounce) can pinto beans, rinsed and drained
  • 1 ripe avocado, pitted, peeled and chopped
  • 1 cup frozen sweet corn, thawed
  • 1 poblano pepper or green bell pepper, chopped
  • ½ cup crumbled Mexican Cotija cheese, optional
  • ¼ cup chopped green onions


  1. In large bowl, combine tomatoes and Simply Salsa™ Mix. Stir to combine. Let stand 10 minutes.
  2. Stir in remaining ingredients. Toss to combine. Salt and pepper to taste.
