Asian Pork Tenderloin Salad Recipe

Honey Teriyaki grilled pork combined with greens for a wonderful simple salad.

  • 2 (¾ lb.) pork tenderloins, trimmed of fat
  • 2 (8-9 oz.) bags cut-up lettuce
  • 15 oz. can Mandarin oranges, drained
  • 8 oz. fresh sliced mushrooms
  • 1 large cucumber, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 3-4 Tbsp. red wine or balsamic vinegar
  • Wide chow mein noodles for garnish

Coat pork tenderloins with ¼-½ cup Honey Teriyaki Sauce. Grill on a lightly greased grill over medium heat for 15-20 minutes or until still slightly pink in the middle. While pork is grilling, assemble the salads. Divide lettuce among 6 large plates*; top with oranges, mushrooms, cucumber and bell pepper. Combine 1/2 cup Honey Teriyaki Sauce and vinegar; whisk to blend. Cut warm pork tenderloin into thin slices; divide among salads. Drizzle salads with dressing; top with chow mein noodles for garnish. Makes 6 servings. *For buffet-style, assemble all salad ingredients on a large serving platter.

I substituted pork chops for pork tenderloin for budget purposes, and I cooked the pork chop in my George Foreman grill, but it was absolutely delicious and easy to make. The sweet and tart together definitely puckered up my tastebuds. My coworkers were jealous!! :)
