Asian Peanut Chicken Noodle Bowl Recipe
An easy Asian noodle bowl ready in minutes!
- 8 oz. dry linguini, broken into thirds
- 14 oz. bag frozen stir-fry onion and pepper mix, thawed
- 2 cups chopped rotisserie chicken
- ¼ cup creamy peanut butter
- Fresh cilantro and chopped peanuts for garnish, optional
Serve it tonight: Cook linguini as directed on package in a large saucepan, adding frozen vegetables during the last minute of cooking; drain. Return to pan; add chicken. In a small bowl, combine next 3 ingredients; stir into pasta mixture. Stir constantly over low heat, until heated through. (For a thinner sauce, stir in ¼ cup water.) Garnish with fresh cilantro and chopped peanuts if desired. Makes 6 servings. Serve it later: Freeze cooked linguini, vegetables and chicken in a large resealable freezer bag. Combine next 3 ingredients in a small separate resealable bag. Tuck sauce bag into linguini bag; freeze. Thaw completely. Heat ⅓ cup water in a large skillet; stir in linguini, vegetables and chicken. Add teriyaki mixture, stirring constantly, until heated through. Suggested sides: Fresh pineapple chunks and steamed broccoli

When I make it I usually make one for that night and prep another for the freezer directions to have a few weeks later. I sometimes I use rotisserie chicken. Other times I cook some frozen chicken thighs or breasts yes n my electric pressure cooker and then toss in.

It is such a great way to transform a plain old noodle meal into an amazing Thai inspired dinner that the ENTIRE family will LOVE!! My 3 year old son and 1 year old daughter LOVE this meal!! We call it "Peanut Butter Noodles"!! Such a great meal- I highly recommend that you give this one a try!
