Artichoke and Spinach Chicken Bake Recipe

This warm, creamy casserole will become a dinnertime favorite.

  • 2½ cups dry instant white rice, prepared as directed
  • 2 (10.5 ounce) cans condensed cream of celery soup, divided
  • 1 teaspoons salt
  • 1 teaspoons pepper
  • 1 (14 ounce) can artichoke hearts, rinsed, drained and chopped
  • 4 green onions, thinly sliced
  • 3 cups cooked, cubed chicken breast
  • 1 cup half and half
  • 2 cups seasoned croutons
  • 2 cups shredded Swiss cheese
  • 1 tablespoons dried parsley (optional)

Serve it tonight: Preheat oven to 375°. Combine prepared rice and one can of soup; place in greased 9 x 13 baking dish. Sprinkle with salt and pepper. Layer with artichokes, onions and chicken. In a medium bowl, whisk the remaining can of soup, half and half and dip mix. Spread evenly over the chicken mixture. Top with croutons, cheese and parsley, if desired. Lightly cover with greased foil. Bake 30 minutes; uncover and bake an additional 20-25 minutes. if desired, place under broiler for a few minutes for additional browning. Salt and pepper to taste. Makes 8 servings. 

Serve it later: Assemble unbaked casserole in a disposable foil pan; cover with foil and freeze. Thaw completely. Bake as directed above. Suggested sides: Fresh pineapple chunks and steamed broccoli

Rated 4 out of 5 by from Addicting By the 3rd bite we were hooked. All had to have second helpings. Was a bit put off at first because rice is dry and sticky. Then I thought about how much I like sticky rice anyway :) May go with 2C rice and/or just a little more liquid next time. And there definitely will be a next time!

Rated 5 out of 5 by from Awesome Chicken and Rice Made this delicious dish on Monday and it was delicious as were the leftovers. Chock full of flavor I took the one suggestion and used 1 can of soup for the rice and another full can for the sauce you pour over the chicken with the artichoke and spinach dip mix. I also used Almond Milk instead of 1/2 and 1/2 with no issues at all. I will make this dish again.

Rated 1 out of 5 by from yuck was so excited to try this recipe - and yuck. not impressed. dry, no flavor and boring. this is the fourth meal I have cooked from the freezer meal workshop - and have to say - I AM DISSAPOINTED. expensive meals, lots of prep time and lousy taste.

Rated 5 out of 5 by from OH MY GOODNESS DELICIOUS!! Made this for supper last week and it was a BIG hit for everyone! They all (kids & boyfriend) had large second helpings:) I had the leftovers for lunch at work and everyone who came near commented on the delicious smell:) I noticed the last review said theirs was dry & I was worried about also. I added a full can of soup in the rice and a full can with the dip mix. Definitely a new family favorite!
