Preheat oven to 350°. Combine Packet 1, 2/3 cup water and 5 Tbsp. butter. Pour into a greased 8 x 8 baking pan. Combine Packet 2 with 2 Tbsp. butter and 1 Tbsp. water. Mix with a fork until small crumbs form. Sprinkle topping on batter. Bake 40-45 minutes until golden brown or a toothpick inserted in center comes out clean. Cool and serve. Makes about 9 servings.
Lighten it up: use plain or Greek yogurt in place of butter in cake and topping. Bake 35-38 minutes.
More ways to mix it up:
Bake cake in an 8-inch round springform pan; bake 45-50 minutes.
Add ½ cup flaked coconut or nuts into topping.
Swirl 1/3 cup Creamy Caramel Sauce into batter.
Stir ½ cup of cinnamon, chocolate or white chips into batter.
For muffins, spoon batter into paper-line muffin cups; add prepared topping. Bake at 350° for 27-30 minutes.
Stir in 1 cup of your favorite fruit into batter.
