Air Fryer Buffalo Chicken Egg Rolls Recipe

ingredients

  • ¼ cup hot sauce
  • 2 ounces Neufchatel ⅓ less fat cream cheese, softened
  • 2 cups chopped, prepared Nashville Hot Shredded Chicken, thawed if frozen
  • ⅓ cup shredded carrots, chopped
  • ¼ cup blue cheese crumbles
  • 2 ribs celery, finely diced
  • 12 egg roll wrappers
  • Light blue cheese or ranch dressing for dipping, optional

This recipe uses Nashville Hot Shredded Chicken.

1. In medium bowl, combine hot sauce and cream cheese. Fold in Nashville Hot Shredded Chicken, carrots, blue cheese and celery; mix well.
2. On work surface, place one egg roll wrapper with the corner pointing toward you, like a diamond. Spoon 3 tablespoons of the buffalo mixture onto the bottom third of the wrapper. Using your finger, wet the edges of the wrapper with water. Lift the point nearest you and wrap it around the filling. Fold the left and right corners toward the center and roll into a tight cylinder. Repeat.
3. Spray rolls with olive oil cooking spray to coat. Place in air fryer basket or on rack in second position in air fryer. Set air fryer to 370°F (do not preheat). Air fry 10-11 minutes, turning over halfway through if needed, or until lightly golden brown. 
4. Serve with dressing on the side for dipping, if desired. 

Makes 6 servings.

Bake Option: Preheat oven to 400°F. Prepare through step 3 on a baking sheet. Bake 16-18 minutes, turning halfway through or until lightly golden brown.
