Summer Corn Salad Recipe

Like summer in a bowl! Great for BBQs, this bright salad is tossed with grilled corn, creamy avocado and garden veggies.

1. Prepare grill to medium-high heat. Brush each ear of corn with 1 teaspoon olive oil. Grill on all sides until slightly charred, about 10-12 minutes.
2. Slice corn off cobs, and place kernels in large bowl. Stir in avocado, tomatoes and cucumbers. Add lemon juice, Seasoned Salt, Seasoned Pepper and remaining 2 teaspoons olive oil. Toss together to coat.
3. Serve immediately. Store leftovers in refrigerator.

Makes 4 servings.

Serving Suggestion: Pair with grilled shrimp or chicken for a main dish.

Note: May substitute 1-2 cups steamed sweet corn kernels in place of grilled corn.
