Rustic Chicken Gnocchi Soup Recipe

  • 2 tablespoons butter
  • ½ cup finely chopped celery
  • ½ cup shredded carrots
  • 2 tablespoons all-purpose flour
  • 2 cups half & half
  • 4 cups chicken broth
  • 2 cups cooked and chopped chicken
  • 1 (17.6 ounces) package refrigerated potato gnocchi
  • 1 cup fresh baby spinach


1. In a large saucepan or Dutch oven, melt butter over medium heat. Add celery, carrots and Garlic Garlic Seasoning; sauté 3-5 minutes or until slightly softened, stirring frequently. 
2. Add flour, stirring until veggies are coated. Whisk in half & half and Rustic Herb Seasoning. Cook, stirring frequently, until thickened. Slowly pour in chicken broth. 
3. Stir in chicken, gnocchi and spinach; simmer 5 minutes or until gnocchi is warmed through and soup is slightly thickened. Season with salt and pepper as desired. 

Makes 8 servings.

Tip: If using frozen gnocchi, prepare according to package directions before adding to soup.
